Shopping: Gettin’ Figgy With It

This delicious recipe, courtesy of the Halekulani, puts figs to good use.

ROASTED CHICKEN SALAD

1 2 1/2 pound roasted whole chicken
2 bunches ‘Aiea watercress
2 bunches micro greens
8 mission figs, cut in halves
8 yellow teardrop tomatoes
8 red teardrop tomatoes
1/2 cup tarragon vinaigrette (see recipe below)

Debone the roasted chicken, chill and place one breast piece and one deboned thigh on top of the bunch of watercress. Garnish with four figs and four each red and yellow teardrop tomatoes. Top off with a small bunch of micro greens or baby lettuce, then drizzle with the tarragon vinaigrette. (Serves two.)

TARRAGON VINAIGRETTE
(approximately 25 servings)

9 ounces tarragon vinegar
7 ounces Dijon mustard
1 ounce garlic, chopped
1/4 ounce white pepper
2 1/2 ounces parsley, chopped
6 ounces mayonnaise
3/4 ounce fresh tarragon
3 1/2 ounces onion, chopped
3/4 quart light salad oil or olive oil
3/4 quart water
1 ounce salt

Blend all ingredients together, except oil, for one minute. Gradually add the oil while continuing to blend. Ready to serve.
