East Coast Eats

Eight states in 10 days. My family recently embarked on a crazy, whirlwind trip through the East Coast to spend time with my brother and his wife. We did a lot of walking, so we had to make up the calories somewhere, right?

My brother really did his homework ahead of our arrival and picked out some ono eateries for us. Dave wanted to be sure my wife, Julie, had something to eat, so each location had at least one vegetarian option on the menu.

Here’s what we feasted on during this memorable adventure (in chronological order).

Skylark Diner – Edison, NJ

We landed at Newark Airport and went straight to dinner at Skylark Diner. Apparently, diners are all the rage in New Jersey, and this one didn’t disappoint. In fact, it made its way to the Food Network’s, “Diners, Drive-Ins and Dives.” I ordered a smoked pork sandwich, but everyone agreed that grandma’s “Portuguese Shrimp and Fettucini” with chorizo and scallops on a garlic-saffron-tomato sauce (pictured here) was the real winner.
