Fleur by Hubert Keller in the Mandalay Bay Casino features an eclectic tapas-style menu. After meeting Keller at the Hawaii Food and Wine Festival this past fall, I was eager to sample the cuisine of the “Top Chef Masters” standout. Upon arriving, we found out about the amazing “Eat the Menu” tasting that features 45 courses for $435. However, we had to pass since we lacked the prerequisite minimum six diners and didn’t have four hours to spare. Still, eager to see what Fleur had to offer, we sat down for what will be what Julie Yoneyama, one of our dinner companions, referred to as the best meal of her trip to Vegas.
