This North Shore Food Truck Serves Fried Catfish and Cornbread with a View

Hughley’s Southern Cuisine opens a beachside to-go at Waimea Bay.

The ‘Aiea location of Hughley’s Southern Cuisine has become a local favorite for mac ’n’ cheese, fried chicken and pork spare ribs. Now, the owners have opened a food truck on the North Shore in the Waimea Bay parking lot.

 

What that means: You can take your to-go lunch plate and stroll over to the beach to watch the waves—without ever having to give up your prized parking spot.

The streamlined menu features some favorites from the restaurant. Fried catfish ($12) has a crispy cornmeal crust and comes with a choice of two sides and cornbread. Chicken and waffles ($11), brisket sandwiches ($10), and fried chicken ($12) round out the menu.

 

On the lighter side, there’s a grilled chicken sandwich ($11), which comes covered in cheese and a ranch-style dressing.

 

We recommend going straight for the sides ($4 each): the hush puppies (fried cornbread balls) are addicting, perfectly spiced with a crunchy exterior; braised collard greens have just a hint of vinegar. They were out of the mac ’n’ cheese when we visited, but it seems like a good plan to cobble together a meal out of a few of the sides if you’re looking for something a little less hefty.

 

 

Drinks include a usual array of sodas and a Southern-style sweet tea ($5), which is served super-sized and extra sweet.
