Seattle eats: Tilth

During my trip to Seattle, my friend Mark Mizuno did a phenomenal job of exposing me to some of the best food in and around the Seattle area. Yet, prior to my trip, I decided Tilth — owned and operated by chef Maria Hines — was the one place I absolutely had to visit, and Mark was pleased to oblige.

Aside from winning a James Beard Award, I was very interested in chef Hines’ organic cuisine. The Pacific Northwest has a bountiful agricultural culture, and I knew Tilth would be the best place to sample dishes made from great local organic produce. Pepper balsamic gazpacho with chives and sweet corn soup

Terrific amuse to prepare the palate for the meal to come. The slight tartness of the gazpacho balanced well with the sweetness of the corn soup.
