Fresh pasta meets fresh produce at the Onda Pasta booth at Ala Moana and Haleiwa farmers’ markets. If you get to the Onda Pasta booth early Saturday and Sunday mornings, you might have your pick of tricolor pasta (spinach, beet and egg pasta, the colors of the Italian flag), semolina vegan noodles or gnocchi alla Romana, not the usual potato kind, but flat discs made with semolina. Or pick up ravioli; the weekly-changing variety might include mushroom and goat cheese, collard greens and feta, or kabocha and goat cheese.
Italian-born chef Andrea Onetti often makes Onda pasta with local produce—greens come from Mohala Farms in Waialua, the beets from North Shore Farms, and eggs from Peterson Egg Farm in Wahiawa.
