Made in Hawaii Recipe: Poke Stop
The 15th annual Made in Hawaii Festival takes place August 20-22 at the Neal S. Blaisdell Center. Festival-goers will enjoy shopping for a selection of ono food, books, unique gifts, arts & crafts, music, plants, jewelry and more. A highlight of the festival each year is the cooking demonstrations from some of Hawaii’s finest chefs.

Long-time Made in Hawaii Festival participant, Chef Elmer Guzman, the executive chef and owner of Poke Stop, will kick-off the cooking demonstrations on Friday, August 20 at 2 p.m.
Chef Elmer is preparing two dishes at the Festival–Singapore style black pepper shrimp and Pulled duck wonton with Lemongrass pineapple sweet and sour.
Here are the recipes for the sauces:
Singapore black pepper sauce
Ingredients
2 tbs. oyster sauce
1 tbs granulated sugar
1 tbs. chopped onion
4 tbs water
1 tbs soy sauce
2 tbs chopped garlic
2 tbs ground black pepper
1 tbs. salad oil.
Procedure
In a sauce pan, heat oil and sweat onion and garlic until transparent. Add rest of the ingredients and simmer for 10 minutes and set-aside.
Lemongrass/pineapple sweet and sour sauce
Ingredients
1 cup rice wine vinegar
1 cup granulated sugar
1 finger ginger smashed
1 stalk thinly sliced lemongrass
1 tbs chili garlic sauce
½ cup diced pineapple
1 tsp black sesame seed optional
Procedure
In a sauce pot, combine vinegar and sugar bring to a boil and reduce by half. Set-aside and add rest of ingredients.
