Made in Hawaii Recipe: Mariposa
The 15th annual Made in Hawaii Festival takes place August 20-22 at the Neal S. Blaisdell Center. Festival-goers will enjoy shopping for a selection of ono food, books, unique gifts, arts & crafts, music, plants, jewelry and more. A highlight of the festival each year is the cooking demonstrations from some of Hawaii’s finest chefs.

Chef Marc Anthony Freiberg, chef de cuisine of Mariposa at Neiman Marcus will present a cooking demonstration on Saturday, August 21 at 4 p.m.
Here is the recipe for his featured dish.
Local “Fruit” Salad with Guava Vinaigrette
Recipe serves 4
Ingredients
2 vine ripe local tomatoes medium dice
2 ripe local avocado medium dice
½ cup medium diced seedless local yellow watermelon
½ cup medium diced seedless red watermelon
¼ cup pitted black olives
4 leaves 1st Look Exteriors fresh organic basil hand torn
2 tbsp crumbled Surfing Goat Dairy Farms feta cheese
1 head of frisee lettuce, using only inner white parts
Fresh cracked pepper
Guava vinaigrette
Ingredients
¼ cup guava frozen guava puree
¼ cup rice wine vinegar
1 tbsp sugar
1 small shallot minced
1 tsp fresh thyme
1 tbsp whole grain mustard
¼ cup extra virgin olive oil
Pinch of salt
Preparation
Defrost guava puree and place in bowl with vinegar, sugar, thyme, mustard, and salt. Whisk in olive oil
Toss tomatoes, avocado, watermelon, olives, feta cheese, basil frisee, & pepper with a ¼ cup of the guava vinaigrette. Season with fresh cracked pepper, and place on a large platter to share. Save excess dressing for future use.
