Dinner with Memoirs
I was fortunate to get an invitation to a party at the Bayer Estate last night (thanks to Pam Davis!) to meet chefs Peter Foster and Kanani Lincoln of Memoirs, a private chef and catering company. Both men have extensive experience in different circles, even a contrast in work styles — “The yin and yang,” Foster laughs.
Memoirs provides services for residents, visitors, and businesses, as well as celebrities like Kanye West and Rihanna. What struck me, aside from their creativity, was their dedication to using local Hawaii products whenever possible.
“There’s such a wide variety of good quality, fresh, local products now,” Lincoln says. “We can go beyond fish, but even with fish, there are so many to choose from. Cooking local has gotten to be a lot more fun, a lot more creative.”
It was a neat little dinner party, and I loved the way Foster casually sat with us to talk about each dish as they came out. Or, in the case of the dessert, talk about what the dish was (since we gobbled it up so quickly). Here’s a quick peek at my evening:

Meet the main partners of Memoirs: chefs Peter Foster and Kanani Lincoln. Foster hails from Los Gatos, CA, and Lincoln is a Kamehameha Schools alumni from Maui. The differences in their knowledge, backgrounds, and work styles seem to be the right formula to make their company work well.
Matt Delaney is already looking to hire them for an office party, probably so he can have that awesome dessert again. Hmmm. Maybe I should figure out an excuse to have it, too!
