On Wednesday night, Hula Grill at the Outrigger Waikiki held its first farm-to-table dinner as part of its Legacy Aloha Program to support local products. Featured local producers included Koloa Rum Company, Aloha Beer Company, Kaiulani Spices, Pacifikool Ginger, HoloHolo General Store, Madre Chocolate, Big Island Abalone and Hawaiian Hearts of Palm.

With a portion of the proceeds going to Paepae o He’eia, a nonprofit dedicated to preserving and maintaining the He’eia Fishpond, the night’s objective was to effectively join the snout-to-tail movement and involve local artists and craftsmen to showcase their products. Starting with Shinsato Hog Farm, Executive Chef Paul Rivera and his team built a special five-course menu, paired with Koala rums and Aloha Beers. Koloa chose a spiced rum for the first course and a dark rum to pair with dessert. Aloha Beer selected three of its eight beers for the middle three courses and contributed their steamship lager, aloha red ale, and kiawe honey porter ale.
