Coming soon: Alan Wong's Amasia at the Grand Wailea, Maui

Alan Wong is cooking up something new. After 16 years of fusing plantation-era dishes with French techniques at his flagship King Street restaurant, he is about to open Amasia in the Grand Wailea on Maui, where he’ll explore what he’s learned from travels to Peru, Singapore and Spain. It will be a place of "global flavors and street food, somewhere where you can dress up or down, eat simple or eat seriously," Wong says.

Amasia will lean heavily on Japanese cuisine, featuring a sushi station and an outdoor grill, robata-style. (Renderings of the new restaurant also suggest a Japanese aesthetic.) Expect to share dishes: whether small plates or large platters, Wong wants you to have a communal experience.

In the kitchen, chef de cuisine Chris Damskey will take the helm. He most recently worked at the Market by Jean-Georges Vongerichten in the Boston's W Hotel.

Wong hopes to open Amasia by spring, following the $2 million renovation of the former Kincha restaurant.

Oh, and case you were wondering about the Disney-esque name, Amasia, it means a converging of continents: North America and Asia.
