Chef shuffle: 53 By The Sea
Does it seem like a lot of chefs are shuffling in and out of Oahu’s food scene lately? There’s Wade Ueoka of Alan Wong’s, who left for Tsunami; pastry chef Elizabeth Dippong joining Chef Mavro; Cafe Julia losing its whole chef team, and bringing in Almar Arcano; the shake up at Whole Ox, with Justin Yu replacing Bob McGee (tune in later this week for more on that); and now Thomas Ho stepping up to become executive chef of 53 By The Sea. Chef Hiroshi Hayakawa, who opened the waterfront venue, had to go back to Japan to open more restaurants, but remains an advisor as Ho rolls out his new menu — which should begin shortly after Mother’s Day on May 12.
We got to meet Ho briefly last week to see what he’s all about and taste some of his offerings at a media preview. Here’s a quick look at some of the bites we had.
