Seattle eats: Tilth
During my trip to Seattle, my friend Mark Mizuno did a phenomenal job of exposing me to some of the best food in and around the Seattle area. Yet, prior to my trip, I decided Tilth — owned and operated by chef Maria Hines — was the one place I absolutely had to visit, and Mark was pleased to oblige.
Aside from winning a James Beard Award, I was very interested in chef Hines’ organic cuisine. The Pacific Northwest has a bountiful agricultural culture, and I knew Tilth would be the best place to sample dishes made from great local organic produce.
