Healthy-licious cooking with Kahala Nui

When you talk about cooking healthy — especially for seniors — it doesn’t usually conjure up thoughts of tasty food. But for at least the last four years, the Kahala Nui Senior Living Community has challenged Kapiolani Community College (KCC) culinary students to create delicious dishes that have high nutritional value and are easy for people to make at home.

This year’s featured ingredient was kampachi, and four teams presented their recipes, with samples, to a crowd from Kahala Nui as well as four of us judges. The teams were critiqued on taste, simplicity, the oral presentation, nutrition, and appearance of the dish. I was pretty surprised to see such creative, easy ways to make meals that were packed with flavor and nutrients. The other nice thing was seeing the students step up to demonstrate their recipes in an entertaining way.

The winners got $700 each, and the other contestants received Williams Sonoma gift certificates. But it was obvious that all of them walked away with a winning experience.
