Vietnamese Cuisine with Charles Phan

James Beard award-winning chef Charles Phan of The Slanted Door in San Francisco will be in Hawaii for two special events, teaching patrons and professionals more about Vietnamese cuisine.

Chef Phan’s passion for cooking was established at an early age. With his parents working two jobs each, he served the role of cook for his family after relocating to San Francisco from Vietname in 1977. His mother’s French/Vietnamese cooking style served as his inspiration and instruction.

He began working in Bay Area restaurants, taking note of the avant guarde restaurants of the time, Chez Panisse and Zuni Cafe, as they influenced his food philosophy. After opening the Slanted Door in 2004 Phan proved through the phenomenal success that combining the Bay Area’s sensibility for fresh ingredients with Vietnamese time-honored cooking techniques is a perfect marriage. Eight years later, showcasing farm fresh, local products, preparing everything from scratch and keeping a limited menu has put The Slanted Door on the cutting edge of Vietnamese cuisine in San Francisco, and the entire country.

Halekulani Living’s Connoisseur Series

Halekulani will welcome Charles Phan on Friday, April 2, 2010 for a cooking demonstration as a part of the Halekulani Living and Connoisseurs lifestyle series.

From 6:30 p.m. – 8:30 p.m., guests are invited to a cooking demonstration and sunset Slanted Door-inspired reception at the Hau Terrace and Lanai.

“Hawaii truly appreciates Vietnamese cuisine, and Halekulani has great admiration for what Charles Phan has done with his family restaurant and seasonal sensibility in a culinary mecca like San Francisco.” said Sabine Glissmann, Food & Beverage Director at Halekulani.

Chef Phan will begin the evening with a cooking demonstration featuring Crispy Shrimp and Pork Imperial Rolls and Braised Short Rib with Lemongrass, Carrot and Daikon Radish. Following the demo guests are invited to a grazing reception of signature “Slanted Door” cuisine including Grapefruit and Jicama salad; Stir-fried Bok Choy with Baby Shiitake Mushrooms and Steamed Long Grain Jasmine Rice, among others, with dessert, coffee and teas to follow.

Wines and signature cocktails Airmail, Whiskey Smash, Ms. Kai and Kai-jito 2 sponsored by Kai Vodka LLC will also be served.

For Culinary Professionals

As a part of their mission to provide advanced culinary opportunities for culinary students and professionals throughout Hawaii, the Hale Aina Ohana will host a special culinary workshop on Vietnamese cuisine with chef Charles Phan.

The workshop takes place on March 31st from 2 to 4 p.m. at Kapiolani Community College, Ohia 118.

This special program is limited to culinary students and culinary professionals (must be a working chef or cook). The cost is $25 for professionals/chefs.

The Hale Aina Ohana is an organization dedicated to the development and support of culinary training programs throughout the state of Hawai’i.  The ‘Ohana provides financial and professional resources towards activities that enhance the scope of learning by culinary students and professionals.
