Pop-Up Alert: Chef Jon Matsubara’s Vegan Menu is One Week Only
No worry carrot curry. Some of the inventive chef’s dishes are back.

If you were wondering where chef Jon Matsubara would pop up next, we have the answer. This week the Hawai‘i-grown chef with New York City experience offers vegetarian/vegan dinner dishes June 11 to 15 at Juicy Brew. You can pick up an avokatsu sandwich (fried avocado with katsu sauce and shaved cabbage on white bread), Thai-spiced jungle carrot curry, and chicken fried pump nuggets (kabocha) along with his contribution to Juicy Brew's TV dinner series, featuring a vegan hamburger steak with faux egg, fried pumpkin and an ube crinkle cookie for dessert in classic TV-dinner tray.

TOMATO POKE is part of the veggie poke bowl at the pop-up.
Grab-and-go items include a salad with hearts of palm and a veggie poke bowl made with tomato poke, asparagus, kabocha and avocado with a gochujang vinaigrette. There will be desserts, too, including a Mexican chocolate cake with cinnamon and chili and toasted almond coconut vanilla ice cream, but no reservations. Here is the full menu.
