From Wave to Table: Water World

Hawaii’s desalinated deep-sea drinking-water business has tapped into a thirsty market, becoming one of the state’s largest foreign exports and, in recent years, raking in as much as $31 million in gross sales. Koyo USA Corp., based in Kona, pumps the deep-sea water it uses for its MaHaLo Hawaii Deep Sea bottled water from 3,000 feet below the ocean’s surface.

You can test the waters at MaHaLo Hawaii Deep Sea Water Showroom and Water Bar in Waikiki. The sleek, modern space is a boutique-cafe hybrid where shoppers can stop in for a cup of tea or coffee, both brewed using MaHaLo’s water, as well as flavored gelatin desserts (also made using MaHaLo drinking water) and croissants made by Patisserie La Palme d’Or, a chic pastry shop at Ala Moana Center.
