Recipe: Seared Ahi Wrap with Cajun Aioli

Big City Diner executive sous chef Patrick Yamaguchi will present one of the nine cooking demonstrations at this year’s Made in Hawaii Festival  on Friday, August 21, 2009 at 4 p.m. 

Chef Patrick will show attendees how to make a Seared Ahi Wrap with Cajun Aioli.

Here’s a look at the recipe: 

Seared Ahi Wrap with Cajun Aioli

Recipe by Patrick Yamaguchi, Big City Diner

Ingredients
• 1 lb Fresh Ahi
• 6 Flour Tortillas
• 1.5 oz Spring Mix Greens or Mesclun Greens
• 1 1/2 Fresh Avocado from M.P. Farms
• 1.5 oz Shredded Carrot
• 3 oz Julienned Cucumber
• 1.5 oz Daikon Sprouts

Dressing
• 1/2 Cup Mayonnaise
• 1/2 tsp Cajun Spice

Preparation

  • Pre-heat a well seasoned cast iron skilled over high heat.
  • Cut ahi into strips, approximately 1" square and set aside.
  • When skillet is well heated, sear outside of ahi strips (approximately 30 seconds each side) and remove from skillet to rest.
  • Slice avocado into 1/2" segments.
  • Divide ingredients into 6 even portions.
  • Spread a thin coat of dressing on one side of each tortilla.
  • Arrange fresh vegetables in the center of each tortilla.
  • lace ahi on top of vegetables and roll each tortilla closed.
  • Slice each roll in half or thirds and serve (use a toothpick to hold the roll closed, if needed).

Recipe will yield approximately 6 servings.

Chef Patrick Yamaguchi is the Executive Sous Chef for Big City Diner. A native of Pohnpei Island, Chef Patrick chose to relocate to the Hawaiian Islands in order to attend Hawaii Pacific University.

His decision to pursue a career in culinary arts grew out of a love for eating and cooking great food.  Chef Patrick joined the Big City Diner Ohana in 2006, where he supervises both restaurant and catered events as well as the development of new recipe and menu items.

Big City Diner is a locally owned and operated restaurant with five locations throughout O‘ahu.

The Made in Hawaii Festival Cooking Demonstrations are coordinated by HONOLULU Magazine and are sponsored in part by the State of Hawaii Department of Agriculture’s Buy Fresh Buy Local program. All of the recipes featured include farm fresh Made in Hawaii local produce or seafood resources.

The 14th Annual Made in Hawaii Festival happens on Friday, August 21 from 10 a.m. to 9 p.m., Saturday, August 22 from 10 a.m. to 9 p.m. and Sunday, August 23 from 10 a.m. to 5 p.m. It is produced by the Made in Hawaii Association and is presented by First Hawaiian Bank.
