Recipe: Fresh Aloun Farms Corn Chowder

Chef Chai Chaowasaree of Chai’s Island Bistro and Singha Thai will present one of the nine cooking demonstrations at this year’s Made in Hawaii Festival. Chef Chai will be on the Cooking Demonstrations stage on Saturday, August 22, 2009 at 2 p.m.

Fresh Aloun Farms Corn Chowder
Recipe from Chai Chaowasaree, Chai’s Island Bistro

Aloun Farms Ewa Sweet Corn |
Ingredients:
2 pieces of fresh Aloun Farms Ewa sweet corn on the cob
1 can of creamy style corn
1 tablespoon vegetable oil
1 tablespoon chopped celery
1 tablespoon chopped Green Onion
1/2 cup of chopped chicken
1 cup chicken stock
1 cup of heavy cream
Pinch of sugar, salt and pepper to taste.
1 whole egg
1 whole beaten egg to brush the puff pastry
Puff Pastry large enough to cover the soup bowl
Preparation
- Grill the corn and remove the nugget from the cobs, set aside.
- In a soup pot add the oil with medium heat, then add celery and green onions, sauté for a minute then add chicken, keep cooking until the chicken is cooked.
- Add chicken stock, bring to a boil, then add cream corn, bring to a boil then add cream sugar salt and pepper.
- Add one beaten egg or corn starch to thicken the soup
- Put in a bowl cover the top of the bowl with a piece of puff pastry brush with egg wash and baked until the puff pastry turn to a golden brown in a pre-heated oven at 350-375 degree.

Chef Chai is the owner/chef of Chai’s Island Bistro and Singha Thai. Chef Chai is one of Hawaii’s best known chefs and is the host of a popular TV show "Dining Out with Chef Chai". He is one of the founders of Hawai‘i’s Island Chefs (HIC), an organization devoted to promoting agriculture and aquaculture in Hawai‘i, and a promiment figure in Hawai‘i Regional Cuisine.
Chef Chai has also recently completed a cookbook, The Island Bistro Cookbook, available now from Watermark Publishing.

Chef Chai opened his first restaurant, Singha Thai Cuisine in Waikiki, 20 years ago. A decade later, he followed with Chai’s Island Bistro at the Aloha Tower Marketplace in Honolulu, which has won a Hale Aina Award in every year since it opened.

The Made in Hawaii Festival Cooking Demonstrations are coordinated by HONOLULU Magazine and are sponsored in part by the State of Hawaii Department of Agriculture’s Buy Fresh Buy Local program. All of the recipes featured include farm fresh Made in Hawaii local produce or seafood resources.
The 14th Annual Made in Hawaii Festival happens on Friday, August 21 from 10 a.m. to 9 p.m., Saturday, August 22 from 10 a.m. to 9 p.m. and Sunday, August 23 from 10 a.m. to 5 p.m. It is produced by the Made in Hawaii Association and is presented by First Hawaiian Bank.
