In Hawaii, everyone has a passionate opinion on where you can find the best poke. Some people swear by Foodland’s deli case, stuffed with varieties of chopped seafood, while other people pay homage to Poke Stop. Still others will point to their favorite lunch wagon’s preparation or boast about Mom’s recipe.
But if there’s one man with the definitive knowledge of poke, it’s Sam Choy. The chef even sponsored the state’s first poke contest in 1991. He’s just come out with a new book, Poke. The book has 140 recipes for poke or poke variations, such as a curried poke salad, bow-tie mahimahi salad and poke patties. You can go upscale with lobster poke or whip up a simple spicy crunchy ‘ahi poke. Man, I need a cold beer and some tofu poke just to make it through reading this book …
