4 oz - Big Eye Ahi ¼ inch dice
1 tsp - Ogo chopped (Hawaiian Seaweed)
1 tsp - Sea Asparagus chopped
1 Tbsp - Sweet Maui Onion minced
To taste - Black, Red, and White Hawaiian Salt
Soy Dashi Sauce
.5 Cup - Kikkoman Soy Sauce
.5 Cup - Water
1 Tbsp - Hawaiian Chili Pepper Water
1 tsp - Dashi Broth
1 tsp - Ginger minced
1 Tbsp - Sesame Oil
Taro Chip
1 Piece - Taro
Procedure
Combine all of the ingredients of the Big Eye Ahi Poke in a mixing bowl and coat with the Soy Dashi Sauce. Thinly slice the taro and fry in a deep fryer at 325 degrees for 1-2 minutes or until golden brown. Garnish with local organic micro greens.
