Chai's Recipe: Thai Style Oxtail Soup

Thai Style Oxtail Soup


3 lbs. Oxtail cut to about 1-2 inches thick or to liking
1 gallon chicken stock or water
10 stalks lemongrass cut to small pieces
20 Kaffir Lime Leaves
10 pieces garlic
4 pieces shallot
3 oz Galangal
2 pieces Thai Chili Pepper (to taste)
1 tablespoon sugar
2 oz fish sauce (to taste)
1 lemon or lime juice
1 oz of Cilantro, cut to half inch long

In a soup pot combine oxtail and chicken stock, bring to boil with high heat keep remove the scum and turn heat down to medium.  Add lemongrass, kaffir lime, garlic, shallot and Galangal let it simmer for about an hour, season with chili pepper sugar, and fish sauce and let it simmer for another half hour or until it’s tendered.  Add lemon juice and Cilantro before serve.
