Honolulu's New Cocktail Contenders

Frozen Coconut Mojito

When asked about Honolulu’s best cocktails, Lewers Lounge, Nobu and Thirtyninehotel immediately come to mind. But, with the arrival of the Waikiki Edition hotel, also came the arrival of Tobin Ellis—a 5-time National Mixology Champion with more than 21 years of bartending experience.

Ellis, along with Christian Self, formerly of Thirtyninehotel and now bar manager of the Waikiki Edition, worked together to create the new drink menus at the Lobby Bar and the Sunrise Pool and Bar. Both bars have their own unique cocktail list—except for Self’s award-winning Deconstructed Mai Tai ($11), which appears on both—and both bars now have made my personal list of bars with the best cocktails.

At the Lobby Bar, my favorite is La Geisha ($11), because it has everything a girl would want in a cocktail. The mixture of guava, strawberry and soju, topped with sparkling sake, had us savoring each sip, as if we were toasting an occasion.

Upstairs, the Sunrise Pool & Bar has its own secret weapon—the Frozen Coconut Mojito ($10). Coconut rum, fresh mint, lime and coconut blended with ice turns this relatively simple drink into an after-dinner delight. Or, instead, make it a prelude to a long night of taste-testing the Edition’s other unique cocktail creations.
