As part of its dream of turning the windward sides of Oahu and the Big Island into the Napa Valley of artisanal chocolate, MADRE CHOCOLATE has set out to elevate local cacao literacy through an ongoing series of chocolate classes. They include Bean-to-Bar Chocolate Making, Traditional Oaxacan Mole-Making, and, the survey course, Chocolate Tasting Tour of the World. Around Christmas, Mother’s Day and Valentine’s Day, watch for Chocolate Truffle Making.

It’s an exciting time for Hawaii’s budding chocolate industry, with all sorts of new players on the field. Our editorial team put the dark chocolates of the three main bean-to-bar brands to a blind taste test (rough job, right?), and MADRE CHOCOLATE'S 70 PERCENT DARK CHOCOLATE came out on top. To be fair, the dissenters who preferred Manoa Chocolate’s 72 percent Dark Chocolate and Original Hawaiian Chocolate’s dark chocolate had strong preferences for their favorites. In the end, all of Hawai‘i’s chocolate lovers win.
