After scouring Oahu’s bars, lounges and restaurants for the best margarita, we found one that hit the spot: the Island Margarita at Roy’s restaurant. We tried a finely blended one, made from scratch with Jose Cuervo Gold tequila, Cointreau Orange, freshly made lime sour and li hing mui at the original Roy’s in Hawaii Kai. “We usually pick up the li hing mui from Chinatown or a crack seed store on our way to work,” says Joel Berge, a bartender at the Hawaii Kai Roy’s. Berge brought together the tastes of a classic margarita with the salty sweetness of li hing mui five years ago and it has become a signature cocktail ever since. A stickler for the original margarita formulation?
