Pablo Gonzalez, owner of Lanikai Juice, is known by his staff as the Alan Wong of smoothies. After 13 years in operation, he's refined the juice business to reflect simple values: Buy local, buy organic, buy fresh, and treat your employees and customers like gold. The behind-the-scenes preparation is impressive: local fruit (think along the lines of 1,000+ pounds of pineapple from Maui every week) is handcut in a refrigerated room, which helps to maintain the fruit's quality and reduce bacteria. The final products, smoothies such as Mango Meringue or Mahalo Carrot, are addicting. The Kailua location is open Monday through Saturday from 6 a.m. to 8 p.m. and Sundays from 7 a.m. to 7 p.m.
