Chefs Sandy Tuason and James Ortiaga, both from Four Seasons in New York City, bring their experiences to the kitchen to produce Pacific/Italian/French fusion favorites such as Hamakua mushroom risotto ($32) with truffled mascarpone, and the furitake crusted ahi ($37) with green papaya and a Kau orange reduction. The fish and shellfish are from day boats and the produce nearly all from local farmers. All of the ice creams are made in house, and the black sugar variety was the recommended pick. Open nightly from 5:30 to 9 p.m.
