Alan Wong starts a blog
Step into Alan Wong's head via his blog. It's like reading his personal journal, as he writes letters to Sonny Acosta, Jr., one of his cooks competing in the Bocuse D'Or Commis Competition. It's full of Wongisms ("The journey is more important than the destination"), offers a glimpse into menu development at the restaurant (a foie gras parfait with li hing mui chutney, savory streusel and radishes), and what the restaurant does when it has an excess of foie gras.
It's a rare look inside one of Honolulu's most famous restaurants and its sometimes idiosyncratic namesake.
