There’s still magic at Morimoto: a server arrives with a bowl of soy milk, stirs in nigari and covers it. Fifteen minutes later, the lid is removed and voila! smooth, soft tofu. Kimchee and shoyu are provided as condiments, and a lacquered miso cod, silky poached egg and assortment of tsukemono complete the breakfast set.
