The chef of a high-end townie restaurant told us about this. It’s a dish he’ll drive to Waipahu for, and when he gets there, he says, “Every table has Thelma’s Special”—a heaping plate of crispy-skinned lechon kawali, the pork belly striated with fat, topped with a dice of raw tomatoes and onions and dressed in a simple soy sauce. Even the fat-averse have been known to cave for this.
