Hilo has a knack for producing pastry shop gems. Pastries at Moonstruck Patisserie are inspired by French and Viennese sweets, thanks to owner Jackie Tan-DeWitt’s training under European pastry chefs. But her time in Asia (her most recent stint was at the Ritz Carlton Singapore), where palates prefer lighter sweets, means she creates less-sweet versions of the original inspiration. Take the Soprano, a take on the classic Opera cake, with three layers of chocolate sponge cake alternating with chocolate mousse and Bailey’s Irish Cream mousse, sealed off with chocolate ganache. Each bite feels like a cloud suffused with chocolate.
