Saimin purists, look away.  Peter Merriman’s favorite dish at his Oahu restaurant combines saimin noodles from Maui’s Iwamoto Natto Factory, a smoky pork broth and generous pulls of kalua pork. Broccoli and sugar snap peas add a sweet vegetal dimension, while a sprinkle of roasted peanuts adds nuttiness and fun. As if a saimin like this needs any more fun. Pair it with the housemade ginger beer that tastes like fresh, juiced ginger, zingy and zesty.
