Paitan ramen at Yotteko-Ya
Pork and chicken, simmered until they’ve surrendered their essence, every last drop, form the soup base of paitan ramen. Two thin slices of chashu pork, braised in shoyu and sake, are more like condiments to the noodles, which, along with the soup, are really the stars of the bowl. Order the noodles Japanese style (firmer).
