Kona kampachi sashimi tiradito at Amasia

Sprinkled with crunchy corn nuts and aswim in passion fruit sauce, chef Alan Wong’s kampachi sashimi tiradito seems like culinary whimsy, but it’s rooted in Peruvian tradition. Wong’s version—with 100 percent local ingredients—is a winner: the Kona kampachi is satisfyingly fatty, Molokai sweet potatoes and Kula corn kernels add sweetness, red chilies provide heat and the bitter, salty corn nuts are just plain fun.
