Kalbi jjim at Sorabol

Think of this as the alternative kalbi, for the times you’re not feeling the sizzling, grilled version. Kalbi jjim takes those beefy short ribs and simmers them in an iron pot until they fall off the bone, nearly melting into a potent sauce of soy, garlic and sugar. This is a family-style entrée, not an individual portion, so be prepared to share. And order rice—you’ll want some to spoon the rich soup over.
