Chris Kajioka’s take on the classic breakfast egg-in-the-hole nestles a brilliant orange Jidori egg yolk in a round of fried, then smoked Breadshop brioche. It’s a culinary burst of cymbals, a powerful riot of parmesan cream amplified by a blanket of black truffle shavings.
