Spaghetti pepperoncini, that spare Italian classic of pasta, oil and garlic, is turned into a raw-food delicacy at Nobu. Its hearts of palm pepperoncini is an addictive tangle of vegetable “pasta” tossed with olive oil, garlic, chili flakes, salt and chives—and because it’s Nobu, there’s some dry miso and togarashi (chili threads), too. Part of Nobu’s progressive new gluten-free menu.
