Chicken-fried local rabbit at Salt Bar & Kitchen

Salt calls it chicken-fried rabbit, we call it a bunny rillette croquette—a seductively unctuous ball of underrated, underutilized Thumper meat. Then a few slivers of pickles cut that thick rabbit pudding like an acid sword.
