Make your own rice-paper spring rolls with a big-enough-for-two plate with grilled pork, its sweet marinade caramelized around the edges, lightly charred shrimp, pressed vermicelli and a heap of Thai basil, mint and lettuce. Take a round of rice paper and stuff it with the fixin’s, then dunk it into a fish sauce and lime dip. Repeat.
