Ethel’s may be in a cinder-block walk-up in the heart of industrial Kalihi, but open the screen door and you’ll find it packed with townies, Japanese tourists and chefs. And it’s so casual, if there’s extra, servers have been known to plonk down free platters of ‘ahi tataki in front of surprised customers. But don’t take your chances; order it. The lightly seared fish is sauced with soy and sesame oil and topped with shoyu-pickled garlic chips, while raw bean sprouts add a fresh crispness.
