Aburi: a method of searing fish. Battera: a type of pressed sushi, a less-often-seen sushi variant, relying on a wooden mold for its rectangular shape, not unlike our Spam musubi. For the aburi battera, Inaba presses rice with mackerel cured in vinegar, and then flames the fish, bringing some of the oils to the surface. A delicate sheet of pickled seaweed crowns each luxuriously fishy bite.
