Hawai‘i Plantation Dinner Under the Stars

Local celebrity and TV personality Lanai Tabura will host his first Hawai‘i pop-up dinner. Hawai‘i Plantation Dinner Under the Stars will focus on the migration of immigrants and the foods they introduced between 1852 and 1900. As each course is presented, Tabura will tell the story of how and when the food became so popular in the Hawaiian Islands. The menu for was created by Hyatt Centric Waikīkī Beach executive chef Yoshi Ohata.

Six-Course Meal: 

  • Spicy ‘ahi poke with Hawaiian chili pepper water, Alaea sea salt, ogo, Maui sweet onion, sea asparagus, green onion, soy caviar and kalo chips.
     
  • Japanese-influenced Duck Foi Gras Nigiri with umami soy, micro shiso, kalo jelly and kiawe smoke chamber.
     
  • A kalo chive pancake with watercress salad follows from Korea.
     
  • Hoisin glazed kurobuta pork belly served with baby bak choi, five spice soy vinaigrette and fried pa'i'ai.
     
  • Adobo lamb rack chop served with balsamic reduction, ulu puree and crispy fried celery leaf.
     
  • Kalo krunch dessert from the Hawaiian Pie Company.
     
  • Wine pairings by Johnson Brothers of Hawai‘i.
